Chocolate strawberry muffins

Ingredients:

  • 200 g all-purpose flour
  • 50 g cocoa powder
  • 150 g granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 120 ml milk
  • 100 ml vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 150 g fresh strawberries, chopped
  • 100 g dark or milk chocolate, chopped (or chocolate chips)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 180°C (350°F).
  • Line a 12-cup muffin tin with paper liners or grease the tin with butter or cooking spray.

2. Mix the Dry Ingredients:

  • In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt.
  • Stir until well combined.

3. Mix the Wet Ingredients:

  • In a separate bowl, whisk together the eggs, milk, vegetable oil (or melted butter), and vanilla extract until smooth.

4. Combine the Wet and Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients.
  • Gently fold the mixture together until just combined. Be careful not to overmix, as this can make the muffins tough.

5. Add the Strawberries and Chocolate:

  • Fold in the chopped strawberries and chocolate chunks (or chocolate chips) until evenly distributed.

6. Fill the Muffin Tin:

  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

7. Bake the Muffins:

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

8. Serve:

  • Enjoy these muffins warm or at room temperature. They pair perfectly with a cup of coffee or a glass of cold milk!
