Chocolate strawberry muffins
Ingredients:
- 200 g all-purpose flour
- 50 g cocoa powder
- 150 g granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 120 ml milk
- 100 ml vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 150 g fresh strawberries, chopped
- 100 g dark or milk chocolate, chopped (or chocolate chips)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Line a 12-cup muffin tin with paper liners or grease the tin with butter or cooking spray.
2. Mix the Dry Ingredients:
- In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt.
- Stir until well combined.
3. Mix the Wet Ingredients:
- In a separate bowl, whisk together the eggs, milk, vegetable oil (or melted butter), and vanilla extract until smooth.
4. Combine the Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients.
- Gently fold the mixture together until just combined. Be careful not to overmix, as this can make the muffins tough.
5. Add the Strawberries and Chocolate:
- Fold in the chopped strawberries and chocolate chunks (or chocolate chips) until evenly distributed.
6. Fill the Muffin Tin:
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
7. Bake the Muffins:
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
