Easy and Fresh Berries Tart

Ingredients:

For the Crust:

  • 175 g soft butter
  • 40 g powdered sugar
  • 1.5 tbsp poppy seeds
  • 1/4 tsp salt
  • 250 g flour

For the Cream Filling:

  • 400 g ricotta
  • 150 g cream cheese (room temperature)
  • 3 tbsp powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest

For the Topping:

  • 1000 g fresh berries (strawberries, raspberries, blueberries, blackberries, etc.)

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 180°C (350°F).
  • In a large mixing bowl, cream together the soft butter and powdered sugar until light and fluffy.
  • Add the poppy seeds and salt, mixing until evenly distributed.
  • Gradually add the flour, mixing until the dough comes together. The dough will be soft but should not be sticky.
  • Press the dough evenly into the bottom and up the sides of a tart pan (preferably with a removable bottom), ensuring an even thickness.
  • Prick the base of the crust with a fork to prevent it from puffing up during baking.
  • Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  • Remove from the oven and let it cool completely in the pan.

2. Prepare the Lemon Ricotta Cream:

  • In a medium bowl, combine the ricotta, cream cheese, powdered sugar, lemon juice, and lemon zest.
  • Beat the mixture with a hand mixer or whisk until smooth and creamy.
  • Taste and adjust the sweetness or lemon flavor if needed.

3. Assemble the Tart:

  • Once the crust has cooled completely, spread the lemon ricotta cream evenly over the base of the tart.
  • Arrange the fresh berries on top of the cream in any pattern you like, covering the entire surface.
  • You can leave the berries as they are or gently brush them with a little warmed apricot jam for a glossy finish.

4. Serve:

  • Refrigerate the tart for at least 1 hour before serving to allow the cream to set.
  • Slice and serve the tart chilled, either on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
