I tried to make a Honey Cake and that's what happened

Ingredients:

For the Crust:

  • 500 g flour
  • 50 g butter
  • 150 g powdered sugar
  • 3 tablespoons honey
  • 1 teaspoon baking soda
  • 2 eggs
  • A pinch of salt

For the Cream:

  • 900 g sour cream
  • 240 g powdered sugar
  • 250 ml heavy cream (33% fat)

Additionally:

  • Freshly crushed berries (strawberries, raspberries, blueberries, etc.)

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 180°C (350°F).
  • In a small saucepan, melt the butter with the honey over low heat until smooth. Set aside to cool slightly.
  • In a large mixing bowl, whisk together the eggs, powdered sugar, and a pinch of salt until the mixture becomes light and fluffy.
  • Gradually add the melted butter and honey mixture to the eggs and sugar, mixing until well combined.
  • In a separate bowl, combine the flour with the baking soda.
  • Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  • Divide the dough into 5-7 equal portions, depending on the desired number of cake layers.
  • Roll each portion of dough into a thin circle (about 3-4 mm thick) on a lightly floured surface.
  • Bake each circle on a baking sheet lined with parchment paper for 5-7 minutes, or until golden brown.
  • Allow the baked layers to cool completely.

2. Prepare the Cream:

  • In a large mixing bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, mix the sour cream with the powdered sugar until smooth.
  • Gently fold the whipped cream into the sweetened sour cream until well combined.

3. Assemble the Cake:

  • Place the first cake layer on a serving plate and spread a generous amount of the cream mixture over it.
  • Add a layer of freshly crushed berries on top of the cream.
  • Repeat the process with the remaining cake layers, cream, and berries, finishing with a layer of cream on top.
  • You can add a thin layer of crushed berries on the very top or simply garnish with whole berries.

4. Chill and Serve:

  • Refrigerate the assembled cake for at least 4-6 hours, or overnight. This allows the layers to soften and the flavors to meld together.
  • Before serving, you can dust the top with powdered sugar or decorate with extra berries.
