I tried to make a Honey Cake and that's what happened
Ingredients:
For the Crust:
- 500 g flour
- 50 g butter
- 150 g powdered sugar
- 3 tablespoons honey
- 1 teaspoon baking soda
- 2 eggs
- A pinch of salt
For the Cream:
- 900 g sour cream
- 240 g powdered sugar
- 250 ml heavy cream (33% fat)
Additionally:
- Freshly crushed berries (strawberries, raspberries, blueberries, etc.)
Instructions:
1. Prepare the Crust:
- Preheat your oven to 180°C (350°F).
- In a small saucepan, melt the butter with the honey over low heat until smooth. Set aside to cool slightly.
- In a large mixing bowl, whisk together the eggs, powdered sugar, and a pinch of salt until the mixture becomes light and fluffy.
- Gradually add the melted butter and honey mixture to the eggs and sugar, mixing until well combined.
- In a separate bowl, combine the flour with the baking soda.
- Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
- Divide the dough into 5-7 equal portions, depending on the desired number of cake layers.
- Roll each portion of dough into a thin circle (about 3-4 mm thick) on a lightly floured surface.
- Bake each circle on a baking sheet lined with parchment paper for 5-7 minutes, or until golden brown.
- Allow the baked layers to cool completely.
2. Prepare the Cream:
- In a large mixing bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix the sour cream with the powdered sugar until smooth.
- Gently fold the whipped cream into the sweetened sour cream until well combined.
3. Assemble the Cake:
- Place the first cake layer on a serving plate and spread a generous amount of the cream mixture over it.
- Add a layer of freshly crushed berries on top of the cream.
- Repeat the process with the remaining cake layers, cream, and berries, finishing with a layer of cream on top.
- You can add a thin layer of crushed berries on the very top or simply garnish with whole berries.
4. Chill and Serve:
- Refrigerate the assembled cake for at least 4-6 hours, or overnight. This allows the layers to soften and the flavors to meld together.
- Before serving, you can dust the top with powdered sugar or decorate with extra berries.
