Ingredients:

  • 500 g mascarpone cheese
  • 150 g brown sugar
  • 250 ml heavy cream
  • 6 egg yolks
  • 300 g Savoiardi cookies (ladyfingers)
  • Cocoa powder (for dusting)

Instructions:

1. Prepare the Cream Mixture:

  • In a heatproof bowl, whisk together the egg yolks and brown sugar.
  • Place the bowl over a pot of simmering water (double boiler) and whisk constantly until the mixture becomes thick and pale, about 5-7 minutes. Be careful not to scramble the eggs.
  • Remove from heat and let it cool slightly.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Once the egg mixture has cooled, gently fold in the mascarpone cheese until smooth.
  • Finally, fold the whipped cream into the mascarpone mixture until fully combined and smooth.

2. Assemble the Tiramisu:

  • Quickly dip each Savoiardi cookie in coffee or espresso (optional, for traditional tiramisu) or a liquid of your choice. Be careful not to soak them too much to avoid making them soggy.
  • Arrange a layer of dipped cookies in the bottom of your serving dish.
  • Spread a layer of the mascarpone cream mixture over the cookies.
  • Repeat the layers, ending with a layer of the cream on top.

3. Chill and Serve:

  • Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.
  • Before serving, generously dust the top with cocoa powder.
