Ingredients:

For the Dough:

  • 250 grams all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 10 grams vodka
  • 110 grams boiling water

For the Filling:

  • 150 grams ground beef
  • 150 grams ground pork
  • 1 medium onion, finely chopped
  • Salt, pepper, and your favorite spices (such as paprika, cumin, or coriander) to taste
  • A splash of water (about 2 tablespoons)

Instructions:

  1. Preparing the Dough:

    • In a large bowl, combine the flour and salt.
    • Add the vegetable oil and vodka, and mix well.
    • Gradually pour in the boiling water, stirring continuously until the dough comes together.
    • Knead the dough on a lightly floured surface until smooth and elastic, about 5-7 minutes.
    • Cover the dough with a clean cloth and let it rest while you prepare the filling.
  2. Preparing the Filling:

    • In a mixing bowl, combine the ground beef, ground pork, and chopped onion.
    • Season the mixture with salt, pepper, and your preferred spices.
    • Add a splash of water to keep the filling moist and mix thoroughly.
  3. Assembling the Cheburek:

    • Preheat your oven to 375°F (190°C).
    • Divide the dough into equal portions (depending on how many Cheburek you want to make, typically 4-6).
    • Roll out each portion into a thin circle on a lightly floured surface.
    • Place a generous amount of the meat filling in the center of each dough circle.
    • Fold the edges of the dough over the filling, pinching to seal and forming a boat shape.
  4. Cooking the Cheburek:

    • Heat a non-stick skillet over medium heat.
    • Place the Cheburek in the skillet and cook for about 3 minutes on each side, until golden brown.
    • Transfer the browned Cheburek to a baking sheet.
  5. Baking the Cheburek:

    • Place the baking sheet in the preheated oven.
    • Bake for 15 minutes, or until the dough is fully cooked and the filling is hot and bubbly.
  6. Serving:

    • Remove the Cheburek from the oven and let them cool slightly before serving.
    • Enjoy hot, garnished with fresh herbs if desired.

Tips:

  • For extra flavor, you can add minced garlic or chopped fresh herbs to the meat filling.
  • Serve with a side of yogurt or a fresh salad for a complete meal.
  • Leftovers can be reheated in the oven to maintain their crispiness.
