Super Crunchy Strawberry Galette
Ingredients:
- 225 g of all-purpose flour
- A pinch of salt
- 1 tbsp powdered sugar
- 125 g of cold butter, cubed
- 1 tbsp apple cider vinegar
- 2-3 tbsp cold water
- 1 tbsp starch (like cornstarch)
- 2 tbsp powdered sugar (for the filling)
- 600 g of fresh strawberries, hulled and sliced
- Almond flakes (optional, for garnish)
Instructions:
1. Prepare the Crust:
- In a large bowl, combine the all-purpose flour, a pinch of salt, and 1 tbsp of powdered sugar.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
- Mix in the apple cider vinegar.
- Gradually add the cold water, one tablespoon at a time, until the dough just comes together. It should be firm but not too wet.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- In a bowl, mix the sliced strawberries with 1 tbsp of starch and 2 tbsp of powdered sugar. This will help to thicken the filling as it bakes.
3. Assemble the Galette:
- Preheat your oven to 190°C (375°F).
- On a lightly floured surface, roll out the chilled dough into a rough circle, about 3 mm thick.
- Transfer the dough onto a baking sheet lined with parchment paper.
- Place the strawberry mixture in the center of the dough, leaving about a 5 cm border around the edges.
- Gently fold the edges of the dough over the strawberries, pleating as necessary to hold the shape.
4. Bake the Galette:
- Brush the crust with a little water and sprinkle with almond flakes for extra crunch and flavor.
- Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
5. Serve:
- Let the galette cool slightly before slicing.
- Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
